On the heels of the West Indian Day Parade post, a Jamaican Rice & Peas recipe seemed in order. Check it out here.
Jamaican Rice & Peas Recipe Ingredients: 1 can- kidney beans, 1 can- coconut milk, 1 cup- rice, 4 stems- scallions, 6 cloves of garlic (minced), 1/3 cup- olive oil, 3 sprigs- thyme, 1 habanero or scotch bonnet pepper, 1 cup- water, salt- to taste (keep it light.) -In a large stock pot, add olive oil over medium heat.-Add garlic, scallion, thyme and pepper and cook for two minutes. -Add beans and coconut milk to pot and cover. Allow to cook for 20 minutes. -Add rice to pot and water. Stir rice and then cover, allow rice cook, covered, for about 20 minutes until rice is completely cooked. Add salt, to taste. -When rice is complete, remove lid and stir rice. -Bon apetit! |

A pillar of yoga, and considered one of a small group of yogis responsible for introducing yoga to the west in the 1960s, B.K.S. Iyengar passed away yesterday in India.
Iyengar introduced the world to "Iyengar Yoga" and authored the text "Light on Yoga" which is read, studied and referenced by so many even to this day. Iyengar yoga is a lineage that focuses heavily on proper alignment and the use of props to achieve proper alignment in a posture. B.K.S. Iyengar is credited with introducing props like yoga blocks, straps and blankets, which you see standard in most yoga classes today Iyengar's legacy lives on through yoga. It can be a great challenge to make time for your mental/physical health and well-being. It is especially hard when it seems as though you may be sacrificing time with loved ones in order to do it.
However, when you make time to ensure that you are maintaining your mental and physical health, everyone around you can benefit from that effort to be healthy. Some immediate benefits may be that you're in a better mood or your energy is improved, or longer term benefits like increased longevity.
